Speciality coffee must score 80 points or more on a scale of 100. We only buy speciality coffee with a score above 84. The substantial majority of our coffee is certified organic. We care about the planet. When we must make an exception, such as with a coffee from a specific region where organic certification is still not available, we trust our suppliers, who are environmentally conscious. We only buy coffee from hand-picked producers that we have worked with for at least five years. We pay more for high-quality coffee. Our prices are all over the place. We pay a premium for high-quality coffee. Every member of our coffee sourcing department is a qualified Q grader, the highest certification available to coffee professionals. They are trained to taste speciality coffee at its source and in our labs.
