For our coffee purchasing, we only buy specialty coffees scoring 84 or higher. Most of our coffee is organic-certified. We obtain this certification wherever possible. When it is impossible to get this kind of coffee, as is the case with some regions from which our coffees come, we rely on suppliers who show environmental responsibility in their practices. Our coffee is sourced from coffee producers who are our partners for at least five years. We prefer to buy coffee from regions that grow the best beans. When we find a high-quality coffee, we pay more to build a lasting partnership with the farm that produced it. Once the coffee reaches our facilities, our Q-grade-certified coffee sourcing department taste-tests the coffee. They are professional coffee tasters with the highest level of certification. They grade the coffee at the source before it is shipped and then again when it is in-house. Our coffee is roasted in small batches ranging from 15 to 70 kilos. We roast this coffee very carefully so that it reaches optimal flavor. Finally, we have optimized our roasting and delivery processes to get our customers coffee as fresh as possible, whether they order it from our cafés or from one of our newsletters.
