Olson was struck by a Konditorei (cafe-bakery) in Berlin during his travels. The inspiration was quickly followed by a visit to many others in Germany and Austria. Olson began to see the Europäische Kaffeehaus as a place in its guests' lives. It became clear that this place could find a niche in America. Olson believed the Kaffeehaus would be a much-needed repose from the daily grind. A place where people could unwind, relax, and think. Cafés in Europe do not cater to fast food. The waiting is part of the experience. Europeans love and cherish this approach. This cafe's music, scents, art, and nature are all a part of its home. This café's peace is inside.
