Everything began with our founder and boss, Tim Coonan, who, after completing his degree in Culinary Arts, started his professional career as a chef in some of the most celebrated fine dining establishments in New York City, as well as in France, Italy, and Chicago. In the 1980s, Tim started studying roasting methods and visited origins. A hobby of roasting coffee beans at home slowly developed into Chicago's premier roasting facility, and Big Shoulders Coffee cafés. We assure you that every cup of coffee from Big Shoulders is a chef's testament to his or her meticulous attention to detail. We want to please you. Our beans come from local farmers that we know and trust, and they are roasted according to the tastes of the bean to preserve their essence. To ensure consistency and quality, we take every care.
