One of the strangest possible locations, an Irish bar in Florence, Italy, inspired me to roast coffee. I was on my second pint of Guinness. Siblings Molly Allen, Chris Allen, Margaret Allen and Jeff Dangremond were all in the Renaissance capital to study coffee at the Espresso Academy. The Espresso Academy was the ideal place for us to learn about coffee. We toured The Mokaflor Roastery during a 10-day crash course on the basics of roasting, and took a test at the end. After everyone passed, we went to a pub and shouted all together, “We have to roast!”. Chris met a brand new San Franciscan Coffee Roaster in his driveway. He agreed to transform his garage, where he and his band practice, into Ready Set’s first roasting room. We received our first batches of green coffee from Brazil, Guatemala, Ethiopia... you name it, and made off to roast, re-roast, test and taste through the summer. Seth Chapman, master roaster and Q-Grader from Water Street Coffee, came to us from Kazoo for a full week to help us dial in our roast profiles. The team also went to Boone, NC to learn the nuances of the roasting process from Bald Guy Brew owner Don Cox, who is a Q-Grader. When the garage’s temperature started to drop, we were ready to serve our families and friends.
